Are the original feed and the site touched?

No. Feed Enrich publishes a supplemental feed. The feed manager, the PIM and on-site SEO stay as they are.

Can we enrich the catalog from Pimcore instead of Dataïads?

You can build anything in Pimcore. Feed Enrich, Catalog Ads and post-click landings are an ads job that is already productized. Most stacks keep Pimcore for the record and plug Dataïads on the way out.
